Description
Easy oven roasted garlic that can be used fresh or frozen in ice cube trays to be easily tossed in to recipes when you need them.
Ingredients
- fresh peeled garlic (I get the 3 lb pound bag of already peeled garlic cloves from Sam’s Club, but you can do this same recipe with however many heads of garlic you’d want to peel)
- olive oil
Instructions
- Turn your oven to 400°F.
- Place your fresh peeled garlic into a baking dish of appropriate size. For the 3lb bag from Sam’s Club I use a 9″ x 13″ glass baking dish, but if you’re only doing a few heads of garlic, I’d recommend a smaller dish.
- Drizzle olive oil all over the garlic cloves and mix evenly. We’re not trying to drown the garlic. We just want a good, even coating.
- Cover with tin foil and bake in oven for about 30 minutes.
- Remove from oven and stir. Place back in oven for an additional 30 minutes. This will keep it from burning and sticking to the bottom of the dish.
- After a total of an hour in the oven, garlic should be soft and mashable. Remove from oven and mash it all into a paste. I use a potato masher to do this.
- Allow to cool.
- Spoon the mashed garlic into ice cube trays with lids and place in freezer. If you’re only making a small amount, it could be kept in a sealed container in the refrigerator for a few days.
